Summer Squash, Melty Cheese and Potato Soup  

I don’t have a great relationship with my mother. Coming out as gay was difficult for her to grasp. But, this adaptation on her soup reminds me of better times and it’s also a damn good summertime version of hers. My mother grew up in northern Mexico where this melty cheese and potato soup is popular. In my version, the potato, cheese (mozzarella or a similar Mexican cheese), roasted poblano peppers, and squash is diced to the same size like confetti that float in a rich chicken broth. Electric colored squash blossoms and a chile oil garnish the soup.
